Pizza with Microgreens
Pizza is great topped with microgreens. I like to put one of our Micro Mix’s on there that has a blend of spicy radish, and rich greens like broccoli and arugula. Also of course basil microgreens do well.
Breakfast pizza’s are excellent. Above are two Chiliquilles pizzas, with an enchilada base, Jack and Cheddar cheese, black beans and peppers, crushed tortilla chips, baked and topped off with a micro mix and a scrambled egg or a fried egg,
Theses are the real traditional crepe actually called a Gallete where they originated in Bretone, France. So they used the flour from the grain that grew best there, Buckwheat. This version has ham and Swiss on the inside, then folded to a square and topped with 2 easy eggs, tomatoes, green onions and radish, and broccoli microgreens.
Sunflower Breakfast Scramble
This is a simple dish where you start with some onions and garlic and a bit of pepper and saute it in olive oil on medium to bring out the flavors, then add some vegies, like mushrooms, broccoli or zucchini and then lastly add some beaten eggs. Top with cheese, fresh tomatoes, and sunflower microgreens
Salad with French Dressing, Blue Cheese and Microgreens
A French dressing can be made with 1 part oil, 1 part vinegar, 1 part water, and 1 part ketchup. Add some sugar or Truvia, to taste and a little salt. Toss the salad with a bit of the dressing, plate and top with blue cheese crumbles and your favorite garnish. Here I used red cabbage, and broccoli microgreens.

It is fun to make your own microgreen mixes. There are mild ones, and spicy ones, and many colorful ones.
Here I used Broccoli, Arugula and Amaranth microgreens for that nice red color.
