Pea Shoots are a very versatile microgreen.
They are hearty and last from 2 to 6 weeks in the fridge for me.
You can use them in cold foods and hot foods, for salads, stir fry, a nice green for a wrap or soup topper. They are beautiful as a garnish with the delicate tendrils.

Young Pea shoots
The Pea Shoots are kept covered for the first 4 or 5 days of growth. So they stay golden until they are uncovered. Some chef’s like to work with them this color.
